On my half-dozen visits I've found China impressively safe. No one ever tried to rob me, even at night in the most suspect places—though I'd certainly not flash excessive cash around.

Opportunities for pooning are ubiquitous in China. But I've found a basic command of Mandarin almost indispensable, except in tourist-trap type Beijing bars.
Pooning in Beijing has become expensive for Westerners in recent years (relative to other Chinese cities), because the girls routinely overcharge foreigners. Hair salons, often with pink signs, usually have extras. There are lots of girls in the Sanlitun bars who generally speak basic English. And there's of course "Maggie's" and many similar clubs (see e.g. International Sex Guide or World Sex Guide etc.)
There're also many karaoke places with girls that will come back to your hotel, but it's best to go there in the company of locals. And there's various incall & outcall "massage services." They'll press contact info for those into your hands outside many hotels. In fact, I'd be surprised if you didn't get a before-midnight call on your hotel phone with an offer of "massage."
There're of course lots of "Escort" sites on the web like e.g.
http://www.escortcn.com/ You can just google "Beijing escorts." But these sites often appear and disappear, I guess due to censorship by the Chinese government.
